West Palm Beach-based TooJay’s Restaurant will open three locations, including two in the tri-county area, using some of the investment funds it recently received from Chicago-based Monroe Capital LLC, according to TooJay’s President and CEO Max Piet.
“Naples will open in early first quarter [of 2019] with Fort Lauderdale and Dania Beach to follow. We continue to look for new sites throughout Florida to continue our growth strategy,” Piet said. “In addition, we have remodeled most of our locations to feature our current design elements. We will also use portions of the investment to complete the remaining remodels.”
Piet said the restaurants are under construction at 2980 N. Federal Highway in Fort Lauderdale and 301 Bryan Road in Dania Beach’s new Dania Pointe development. He didn’t disclose the amount of the investment.
Founded in 1981, TooJay’s currently operates 28 locations in the Sunshine State. Open for breakfast, lunch and dinner, its restaurants serve sandwiches, made-from-scratch soups, salads and baked goods, according to its website.
